The Outliner is a list of everything that is the current Set, Scene or Shot that you are working on. To open the Outliner Panel, click on the tab in the upper left corner of the software. This will open the panel in Quadrant 1 (Hotkey - Alt+8)

Overridden - Only in the Scene or Shot. This means that the user has moved or deleted the object from the scene or shot.
